1 can green and rinsed chickpeas
1 tablespoon minced garlic
2 tablespoons stone ground mustard
juice of 2 fresh lemons
2 tablespoons maple syrup
1 cup extra virgin olive oil
1/2 cup feta cheese

De-stem the kale by peeling the stems off and chop it into fine pieces, almost shredded.

Chop 1/2 of a red onion into relatively small pieces.

In a large bowl, combine the chopped kale, chopped red onion, 1 cup of dried cranberries, 1/4 cup of roasted pumpkin seeds, 1/4 cup of slivered almonds, and 3 cups of cooked and cold quinoa.

Add 1 can of green and rinsed chickpeas to the bowl and stir all the ingredients together until well combined.

In a separate bowl, whisk together 1 tablespoon of minced garlic, 2 tablespoons of stone ground mustard, the juice of 2 fresh lemons, 2 tablespoons of maple syrup, and 1 cup of extra virgin olive oil until combined and slightly thickened.

Pour half of the dressing over the salad and stir to combine.

Add the remaining half of the dressing and stir again until the salad is nicely coated with the dressing.
