Pepper Pasta Salad

1/2 cup mayonnaise
1 tbsp lime juice
1/2 cup olive oil
2 tbsp vinegar
2 tbsp honey
1 tbsp Dijon mustard
1 tbsp chipotle sauce
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp dried parsley
1/2 tsp garlic powder
salt and pepper to taste
400 g dried pasta
1 chopped yellow pepper
1 chopped green pepper
1 chopped red pepper
1/2 seedless cucumber
1/2 cup chopped tomatoes
1/2 sliced red onion
1/2 cup sliced green onion
1/4 cup black olives
1/2 cup sliced sundried tomatoes

Make the dressing by combining 1/2 cup mayonnaise, 1 tbsp lime juice, 1/2 cup olive oil, 2 tbsp vinegar, 2 tbsp honey, 1 tbsp Dijon mustard, 1 tbsp chipotle sauce, 1/2 tsp dried basil, 1/2 tsp dried oregano, 1/2 tsp dried parsley, 1/2 tsp garlic powder, and salt and pepper to taste in a bowl.

Set the dressing aside.

Boil 400 g of dried pasta until al dente.

Chop 1 yellow pepper, 1 green pepper, and 1 red pepper.

Chop 1/2 seedless cucumber.

Chop 1/2 cup of tomatoes.

Slice 1/2 red onion and 1/2 cup of green onion.

Add 1/4 cup of black olives and 1/2 cup of sliced sundried tomatoes to the salad mixture.

Mix the chopped vegetables and pasta together.

Add the dressing to the salad and toss to combine.

Chill the salad until ready to serve.
