Prepare a saucepan on an induction burner.
Add 1.25 cups of distilled white vinegar to the saucepan.
Add 3 tablespoons of kosher salt and 2 tablespoons of sugar to the vinegar.
Heat the mixture until the salt and sugar dissolve completely, stirring to ensure no crystals remain.
Transfer the brine to a glass bowl and add 2 cups of cold water.
Place the brine mixture in the refrigerator to chill.
Prepare 7 persian cucumbers by slicing off the ends and cutting them into slices suitable for hamburgers.
Slice 1 serrano chili pepper into rounds after removing the stem and end.
Clean a quart jar with hot water and ensure it's as clean as possible.
Fill the jar with cucumber slices, adding the sliced serrano chili, 2 cloves of chopped garlic, and some fresh dill in between layers.
Add 1 tablespoon of coriander seeds and 0.5 teaspoon of mustard seeds to the jar.
Pour the chilled brine over the cucumbers, ensuring they are fully submerged.
Seal the jar tightly and refrigerate for at least 24 hours before tasting.
