Mix 2 heaped cups of all-purpose flour, 1 teaspoon of salt, and 1/2 teaspoon of baking powder in a bowl.
Add 5 tablespoons of oil and mix everything together.
Gradually pour in hot water and knead the dough for about 3 to 4 minutes until smooth.
Cover the bowl and let the dough sit for about 2 hours at room temperature.
Divide the dough into equal-sized balls and roll them out thin and even.
Cook the tortillas on a heated tawa for about 30 to 40 seconds on each side, then keep them wrapped in a cloth to stay soft.
Prepare the vegetable filling by mixing 1 cup of cooked corn, 1 small finely chopped onion, 1 finely chopped capsicum, 1 finely chopped green chili, and a few chopped coriander leaves.
Season the filling with 1/4 teaspoon of salt, 1/4 teaspoon of pepper, and 1/4 teaspoon of mixed herbs, and mix well.
Grease a skillet with oil and place grated cheese on one side of the tortilla, followed by the prepared vegetable filling and more cheese on top.
Close the tortilla and cook on medium-low flame, flipping once until the cheese melts.
Prepare the topping by mixing 1 cup each of green and red capsicum, 1 cup of cooked corn, sliced black and green olives, and 1 cup of grated mozzarella cheese.
Season the topping with 2 tablespoons of Italian seasoning, 1 teaspoon of chili flakes, 1/2 teaspoon of pepper, and 1/2 teaspoon of salt, then add 1 1/2 tablespoons of tomato ketchup and mix well.
Assemble the nachos by placing flavored nacho chips on a plate and spreading the vegetable topping evenly on top.
Top with more grated mozzarella cheese and melt the cheese by placing the plate in a heated pan or oven for 10 to 15 minutes.
