Lower the heat to a simmer and flip the chicken again.
Retire half the oil into a metal pot for safety.
Add chopped garlic to the skillet with the chicken.
Pour in white cooking wine and let it simmer until reduced by half.
Add Italian herbs for flavor, and adjust seasoning as desired.
