Marinated Octopus Skewers

Put plenty of water in a large, deep pot. Do not add salt. When the water boils, grab the octopus by the head with a hook and dip it into the boiling water up to three times. After the third time, leave it in the cooking water. When the water starts to boil again, start counting the time below.

For an octopus weighing up to 3 kg, first cook for 15 minutes in boiling water over high heat and then leave for another 20 minutes over low heat, almost without boiling. Then remove it to a tray.

Cut 3 cooked octopus’ legs into enough pieces to make 6 skewers.

Assemble each of the 6 skewers, alternating the cooked octopus with 2 cooked tinned potatoes.

Heat a frying pan over medium heat and lightly grease with oil. Cook the octopus’ skewers on both sides until golden brown to your liking.

Prepare the dressing by mixing 1 clove of grated garlic, 2 teaspoons of chopped parsley, 1/2 teaspoon of sweet or hot paprika, 4 tablespoons of olive oil, 1 tablespoon of sherry vinegar and salt to taste. Set aside until ready to serve. Place the skewers on a plate and season.
