Pour warm milk into the mixer and add active dry yeast and sugar; mix and let sit for 10 minutes.
Add dark rye flour and other ingredients to the mixer and mix until smooth.
Cover the dough and let it rise until doubled, about 45 minutes.
After rising, sprinkle in cocoa powder and mix until incorporated.
Divide the dough into four pieces, rolling each into a rectangle.
Layer the rectangles together and roll them tightly into a loaf.
Pinch the ends and place the loaf into a greased loaf pan.
Cover with plastic wrap or a damp towel and let rise until doubled again.
Preheat the oven and brush the loaf with egg wash before scoring it.
Bake until the internal temperature reaches 195°F.
