1/4 cup Water
1 small Capsicum

Chop 2 Potatoes into medium-sized chunks and place them in water to prevent browning.

Heat a Pan and add 2 tsp of Oil.

Add the Potatoes to the Pan, ensuring no water is added.

Fry the Potatoes until they turn golden brown on the outside.

Turn down the flame and add 1 Green Chilli (slit), 4 Cloves of sliced Garlic, and 1/2 an Onion (cut into medium chunks). Toss for a second.

Add 2 tbsp of Soy Sauce, a pinch of Salt, and 1 tbsp of Sugar. Toss to combine.

Once the Sugar has melted completely, add around 1/4 cup of Water and toss it around. Cover the Pan to cook the Potatoes with steam.

Check on the Potatoes; once the water has thickened, glaze the Potatoes with the liquid.

Add 1 small Capsicum and cook for 30-40 seconds, adding a splash of water if necessary.

Once the water has evaporated completely, add 1 tsp of Sesame Oil and toss.

Top with toasted Sesame Seeds and toss again. The dish is now ready to serve.
