Prepare the soy sauce seasoning by mixing 2 tablespoons of ching ganang soy sauce, 1/2 tablespoon of oyster sauce (or yandu for vegan), 1/2 tablespoon of minced garlic, 1 tablespoon of brown sugar (or corn syrup or brown malt syrup), 1/8 teaspoon of black pepper, and 1/4 cup of cold water in a bowl until the sugar dissolves completely.

In a medium-sized pot, add 450 g of baby potatoes and cover with 6 cups of cold water, ensuring the water is 1 inch above the potatoes. Add 1 tablespoon of salt and cover the pot with a lid.

Set the heat to high and bring the water to a boil. Boil the potatoes for 12 minutes with the lid on.

After 12 minutes, check if the potatoes are done by inserting a chopstick; if it goes in easily, they are done. Turn off the heat and quickly rinse the potatoes with cold water for about 30 seconds to stop the cooking process.

Let the potatoes cool for 15 to 20 minutes until warm to touch. Using a ramekin or heavy mug bottom, gently smash each potato to flatten it slightly without breaking it apart.

Break the smashed potatoes into clusters using your hands to allow the soy sauce seasoning to absorb better.

Preheat a non-stick frying pan on high heat for 1-2 minutes. Add 2 tablespoons of cooking oil and then add the potatoes, ensuring they sizzle upon contact with the pan.

Brown the potatoes on both sides for about 2 minutes, redistributing the oil for even cooking. Flip the potatoes and add a little more oil, browning the other side for another minute.

Once browned, move the potatoes to the side of the pan and add 1 tablespoon of butter (or soy butter for vegan) in the middle. Pour in the soy sauce seasoning and let it sizzle for 15-20 seconds on high heat.

Turn off the heat and mix everything together until the sauce thickens to a gravy consistency. Add the minced scallions and mix again.

Transfer the potatoes to a serving plate and drizzle with sesame oil and sprinkle with sesame seeds before serving.
