Preheat the oven to 200 degrees Celsius.
Bring a large pot of water to a boil.
Peel the potatoes.
Cut the potatoes into 1 centimeter sheets, then cut those into 1 centimeter chips.
Add three big pinches of salt to the boiling water.
Add 1 tablespoon of white vinegar to the water.
Add the chips to the boiling water and let them cook for 5 to 10 minutes.
Check if the potatoes are ready by stabbing them with a knife; they should give some resistance but still be soft.
Drain the potatoes and let them dry.
Space the chips out on a baking tray, ensuring not to overcrowd the pan.
Coat the chips in olive oil.
Place the baking tray in the oven for 15 to 20 minutes.
Flip the chips and return them to the oven for another 20 to 30 minutes.
Transfer the chips to a bowl lined with paper towel to absorb excess oil.
Immediately sprinkle the chips with salt and Steelers seasoning salt.
