The sauce reflects the region's agricultural heritage and is often used to spice up everything from gumbo to eggs. Today, it has gained popularity worldwide, inspiring countless variations and adaptations.

Rinse the Tabasco peppers thoroughly.
Remove the caps from the peppers and wear gloves to avoid irritation.
Place the rinsed peppers in a food processor.
Add 4 teaspoons of salt to the food processor (tripling the amount for 1.5 pounds of peppers).
Pulse the food processor to create a thick paste, running it on low speed for about 4 minutes.
Transfer the paste into a half-gallon jar using a funnel.
Place a lid on the jar without tightening it to allow air to escape during fermentation.
Label the jar with the date and check it in 3 days for signs of fermentation.
After 7 days, weigh the mash and add 1 tablespoon of salt per pound of mash to speed up fermentation.
Mix the additional salt into the mash and transfer it back into the jar, mashing it down to pack it tightly.
