Fresh Peach and Tomato Salad

Zest one lemon and place the zest into a bowl.
Cut the lemon in half and juice it, pouring the juice into the same bowl.
Add 1 tablespoon of honey to the bowl and stir to combine and dissolve the honey.
Slowly drizzle in 1/4 cup of high quality extra virgin olive oil while whisking to combine.
Taste the vinaigrette and season with kosher salt and black pepper as desired.
Add 1 tablespoon of chopped fresh herbs (fresh basil) to the vinaigrette and mix well.
Rinse 3 peaches and 3 beefsteak tomatoes under cold water.
Divide the peaches, discard the stones, and cut each peach half into quarters.
Cut away the cap from the tomatoes, divide them, and cut each half into quarters.
Grab a beautiful serving platter for presentation.
Arrange the peach and tomato wedges alternately on the platter in a composed style.
Sprinkle chopped green onion over the salad, allowing the bits to fall between the pieces.
Sprinkle about 1/4 cup of crumbled feta cheese over the top of the salad.
Whisk the dressing again and drizzle it all over the salad.
Sprinkle the top of the salad with chopped fresh basil.
