Spray the crock-pot liner with non-stick cooking spray.

Add 2 chicken breasts (about 1.5 pounds) to the crock-pot.

Season the chicken with 2.5 to 3 tablespoons of gluten-free taco seasoning.

Add 1 (8 ounce) package of cubed cream cheese on top of the chicken.

Pour about 14 to 15 ounces of salsa over the cream cheese and chicken.

Sprinkle 1 pound of queso quesadilla cheese over the top of the chicken and cream cheese mixture.

Place the lid on the crock-pot and cook on high for 3 to 4 hours or on low for 6 to 7 hours.

After cooking, use a meat chopper to shred the chicken and mix everything together.
