Wilt spinach in a little bit of water over medium heat until bright green, about 2-3 minutes; remove from heat.
Chop one shallot, half a bell pepper, and one jalapeno (seeded and diced).
Sweat the shallot and bell pepper in a little bit of water over medium heat, adding a pinch of salt to draw out moisture.
Drain soaked cashews and blend with 1/2 cup almond milk until smooth.
Add juice of half a lemon, 1/4 cup nutritional yeast, 1/2 teaspoon smoked paprika, salt, pepper, 1/4 teaspoon celery seed, and 1 teaspoon vegan Worcestershire sauce to the cashew mixture; blend until combined.
Incorporate wilted spinach into the cashew mixture and heat through until thickened slightly.
Transfer to a serving bowl and top with green onions if desired; serve with tortilla chips, pita chips, or crackers.
