Creamy Fluffy Garlic Mashed Potatoes

Wash the potatoes thoroughly to remove any pesticides.
Peel the potatoes using a paring knife, cutting out any dark spots as needed.
Soak the peeled potatoes in cold water to prevent oxidation until ready to chop.
Chop the potatoes into even-sized pieces to ensure they cook uniformly, placing them back in cold water as you go.
Place the chopped potatoes into a wok or large pot and cover with cold water.
Add sea salt to the water.
Bring the water to a boil over high heat, then reduce to a simmer.
Cook the potatoes until fork-tender, about 15-20 minutes.
While the potatoes are cooking, prepare the garlic by peeling and crushing the cloves.
In a separate bowl, mix the heavy whipping cream and Kerrygold butter together.
Once the potatoes are done, drain them and return them to the pot.
Add the garlic, butter, and cream mixture to the potatoes.
Mash the potatoes using a stand mixer until smooth and creamy, avoiding lumps.
Season the mashed potatoes with sea salt and cracked black pepper to taste.
Fold in a small amount of sour cream for added creaminess, adjusting to taste.
Garnish with chopped parsley or chives before serving.
