HOW TO MAKE AGUACHILE | MEXICAN SHRIMP RECIPE

Traditionally served as a refreshing dish during hot weather, it showcases the vibrant flavors of fresh seafood and zesty lime. This dish is often enjoyed during gatherings and celebrations, reflecting the rich culinary heritage of Mexican coastal cuisine. Today, aguachile has gained popularity beyond Mexico, inspiring variations worldwide, with different proteins and spice levels.

Remove the shell from the shrimp and cut through the end of the tail to clean it.
Cut the shrimp in a butterfly shape and place them in a bowl.
Add 2.5 cups of fresh lemon juice to the shrimp and save half for later.
Marinate the shrimp in the lemon juice for about 20 minutes, stirring occasionally to ensure even cooking.
Peel the cucumbers, remove the seeds, and slice them into half moons.
Slice the onion into half moons.
After 20 minutes, blend the cilantro, 2 serrano peppers, salt, and some of the lemon juice.
Add the blended sauce to the marinated shrimp.
Add the sliced cucumbers and red onion to the shrimp mixture.
Season with black pepper to taste and adjust salt if needed.
