Combine 1/2 cup of flour with 1 teaspoon of salt and 1/4 teaspoon of black pepper in a bowl and set aside.
Beat together 2 large eggs in a second bowl until well blended.
In a third bowl, place 1 1/2 cups of Panko bread crumbs.
Slice 1 1/2 pounds of zucchini into half inch thick rounds and discard the ends.
Dredge zucchini pieces in the flour mixture, tapping off the excess.
Dip zucchini in the beaten egg, letting excess egg drip back into the bowl.
Transfer zucchini to the breadcrumbs, ensuring an even coating.
Place breaded zucchini on a baking sheet or platter.
Heat a large heavy skillet (cast iron) over medium heat and add about a quarter inch of oil.
Test the oil temperature with a breadcrumb; it should sizzle or reach 350 degrees Fahrenheit.
Cook zucchini in batches in a single layer, sautéing for about 2 minutes per side until golden brown and crispy.
Transfer cooked zucchini to a rack set over a baking sheet lined with paper towels to keep them crispy.
Sprinkle with kosher salt immediately after cooking.
For a healthier option, spray both sides of zucchini with cooking spray and bake at 425 degrees Fahrenheit for 18 to 20 minutes, flipping halfway.
To air fry, spray both sides with cooking spray and air fry at 370 degrees Fahrenheit for 10 to 13 minutes without flipping.
For the dipping sauce, combine mayonnaise, grated fresh garlic, 1/2 tablespoon of fresh lemon juice, 1/4 teaspoon of salt, and black pepper in a bowl and stir together.
