No Mayo Citrus Slaw

Remove the core from the cabbage and peel off a few outer leaves.
Cut the cabbage in half and then in half again to create quarters.
Cut out the center of the cabbage to avoid bitterness.
Slice the cabbage into very thin ribbons using a knife or a mandolin slicer.
Zest half of the orange and the whole lime into a bowl.
Juice the whole orange and lime into the bowl.
Add 1/4 cup olive oil and 1 tablespoon apple cider vinegar to the bowl.
Add 1/2 teaspoon kosher salt and black pepper to taste.
Stir all the ingredients together until well combined.
Taste the mixture and adjust seasoning if necessary.
Cover the bowl and place it in the fridge to let the flavors meld.
