Welcome to another video, today we're making a delicious salsa for pupusas with a spicy touch that can be adjusted to personal taste.

For the salsa, we have 1.5 pounds of tomatoes, 1 small red bell pepper, 1 red onion, 1 clove of garlic, 1 spicy pepper, green onion, 1 teaspoon of cumin, 0.5 teaspoon of pepper, 1 teaspoon of homemade seasoning, 1 bay leaf, and 1 teaspoon of dried oregano. You can use fresh oregano if you have it, and some cilantro to taste.

Chop the red onion into large pieces.

On a comal, roast the peppers to make a roasted chili paste. I'm also making a tomato salsa to preserve them.

The green onion and cilantro are optional, but I'm using them because I have them.

Add 0.5 cup of water to the tomatoes and let it simmer on low heat, covered, allowing the tomatoes to cook in their own juice.

After about 10 minutes, uncover and check the tomatoes and vegetables; they should be cooked and cooled, ready to go into the blender or food processor.

Blend the cooked tomatoes and vegetables until smooth. If you want a thinner salsa, you can add more water, but I'm leaving it as is.

Add 2 tablespoons of oil to the blended salsa; if you don't want to add oil, you can skip it. Let it simmer until it boils, then taste and adjust the seasoning with salt and pepper.

If the tomatoes were not very sweet, you can add a pinch of sugar, but I won't be adding any since my tomatoes are ripe and sweet enough.

Once it starts boiling, let it simmer on low heat for 5 minutes, then turn off the heat and it's ready.

Let it cool and store it in glass jars in the refrigerator. This salsa can be made ahead of time, but don't let it sit too long in the fridge as it can spoil.
