Chop half a cabbage as finely as possible.

Add water to a pan and boil.

Place the chopped cabbage in a large bowl and pour boiling water over it. Let it rest for at least 10 minutes.

While the cabbage is resting, chop the onion and carrots.

After 10 minutes, drain the cabbage well and add the chopped onion and carrots to the bowl.

Add 1/2 cup of vinegar, 1/2 cup of water, 1 tablespoon of oregano, and 1 tablespoon of salt to the bowl. Mix everything with clean hands until well combined.

For the salsa, add 1 jalapeno, 5 tomatoes (halved), half an onion, 3 garlic cloves, 1 tablespoon of white vinegar, 1 teaspoon of Kahlua, and 1/4 cup of water to a blender and blend until smooth.

Heat 1 tablespoon of oil in a pan over medium-high heat.

Add the blended salsa to the pan and stir occasionally, boiling for approximately 8 minutes until the sauce reduces.

Turn off the heat and let the salsa cool to room temperature.
