Gather new potatoes from the garden and rinse them thoroughly to remove dirt.
Trim any bad spots or eyes from the potatoes as needed.
Dice the potatoes into uniform pieces.
Turn on the burner to medium-high heat.
Add 3 cups of water to the pot.
Add 1/2 cup of chopped onion to the pot.
Add 2 tablespoons of butter to the pot.
Add 1/2 teaspoon of salt and 2 teaspoons of chicken bouillon powder to the pot.
Add pepper to taste.
Bring the mixture to a boil, then reduce to a simmer and cover the pot.
Let the potatoes simmer for about 20-30 minutes until tender.
Check the potatoes for doneness with a cake tester.
Mix 1 tablespoon of cornstarch with cold water to create a slurry.
Add the cornstarch slurry to the pot and stir to thicken the broth.
Let it cook for a few more minutes to thicken up before serving.
Serve the potatoes garnished with chives.
