Sweet Potato Quesadilla

2 medium sweet potatoes
1 cup shredded cheese (cheddar or Monterey Jack)
4 large flour tortillas
1/2 tsp cumin
1/2 tsp paprika
1/4 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1/4 cup chopped fresh cilantro (optional)
Sour cream or salsa for serving (optional)

Peel and dice the sweet potatoes into small cubes.

In a pot, boil the sweet potatoes in salted water until tender, about 10-15 minutes. Drain and let cool slightly.

In a bowl, mash the sweet potatoes with cumin, paprika, salt, and black pepper until smooth.

Heat a skillet over medium heat and add a little olive oil.

Place one tortilla in the skillet, spread a portion of the sweet potato mixture on half of the tortilla, and sprinkle with cheese.

Fold the tortilla over to cover the filling and cook for 2-3 minutes on each side until golden brown and the cheese is melted.

Repeat with the remaining tortillas and filling.

Cut the quesadillas into wedges and garnish with chopped cilantro if desired.

Serve warm with sour cream or salsa on the side.
