Instructions

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Add diced red onion and bell peppers to the skillet. Sauté for about 5 minutes until softened.
  3. 3Stir in black beans, corn, cumin, chili powder, salt, and black pepper. Cook for another 3-4 minutes until heated through.
  4. 4Remove the vegetable mixture from the skillet and set aside.
  5. 5In the same skillet, place one tortilla and sprinkle half of the cheese on one half of the tortilla.
  6. 6Add a portion of the vegetable mixture on top of the cheese, then sprinkle the remaining cheese over the vegetables.
  7. 7Fold the tortilla in half to cover the filling and cook for about 2-3 minutes on each side until golden brown and the cheese is melted.
  8. 8Repeat the process with the remaining tortillas and filling.
  9. 9Cut the quesadillas into wedges and serve hot, garnished with fresh cilantro if desired.
