Vegan Black Bean & Sweet Potato Quesadillas

1 medium sweet potato, peeled and diced
1 can (15 oz) black beans, drained and rinsed
1 cup vegan cheese shreds (optional)
4 large whole wheat tortillas

Boil or steam the diced sweet potato until tender, about 10-15 minutes. Drain and set aside.

In a large bowl, combine the cooked sweet potato, black beans, and vegan cheese. Mash slightly with a fork to combine.

Heat a non-stick skillet over medium heat and add a little olive oil.

Place one tortilla in the skillet and spread a portion of the black bean and sweet potato mixture on one half of the tortilla. If using, sprinkle some vegan cheese on top.

Fold the tortilla over to cover the filling and cook for about 3-4 minutes on each side, or until golden brown and crispy.

Repeat with the remaining tortillas and filling mixture.

Once cooked, remove from the skillet and let cool slightly before cutting into wedges.
