Peel the russet potatoes and cut them into one half inch cubes.
Place the potato cubes in a bowl of water to prevent them from turning brown.
Pour the potatoes into a colander to drain the water.
Cover the potatoes with plastic wrap and microwave on high for 5 minutes.
After 2.5 minutes, redistribute the potatoes in the microwave and continue cooking for another 2.5 minutes.
Drain any excess liquid from the partially cooked potatoes using a colander.
Let the potatoes air dry while preparing the skillet.
Heat 1 tablespoon of butter and 1 tablespoon of peanut oil in a hot skillet.
Add the potatoes to the skillet in a single layer and cover with a lid for about 2 minutes without stirring.
After 3 minutes of cooking, lift the lid and check for browning, then season with salt.
Use a spatula to flip the potatoes, trying to expose all sides to the skillet.
Continue cooking for an additional 3 minutes, then shuffle the potatoes around in the skillet every 15 seconds until done.
Plate the home fries and serve.
