Fava beans, also known as broad beans, have been cultivated since ancient times and are a staple in Mediterranean diets. In the U.S., they are celebrated during spring when they are freshly harvested and their tender pods are at their peak. Often enjoyed in salads or as a side dish, fresh fava beans offer a unique, buttery flavor and are a great source of protein and fiber. Their versatility has led to adaptations in various cuisines, making them a beloved ingredient in many dishes.

Wash the fava beans by adding water and rubbing them, then put them in a strainer.
Turn on the stove and add 3 tablespoons of grapeseed oil (or extra virgin olive oil) to a pan.
Add the diced onions to the pan and sprinkle a little salt on top.
Stir the onions, cover the pan, and cook on medium heat until the onions are translucent.
Clean the fava beans by cutting the top and removing the veins from the sides.
Cut the fava beans into pieces about the size of green beans.
After 20 minutes, check the onions; they should be browned.
Add the fava beans to the pan with the onions and mix well.
Add 1.5 teaspoons of Himalayan salt and sauté for 3-4 minutes.
Pour in 3/4 cup of hot water and mix everything together.
Cover the pan and cook on medium heat for about 25-30 minutes until the fava beans are soft.
After 20 minutes, check the fava beans for texture and salt, adjusting as necessary.
After 30-35 minutes, when the fava beans are done, smash the garlic and add it to the pan.
Mix in the garlic and cover, cooking for another 5 minutes.
After 5 minutes, add the fresh cilantro and turn off the heat.
Plate the dish and garnish with fresh lemon slices.
