1

Clean the dry black beans, removing any pebbles or foreign objects.

2

Place the beans in a bowl, cover them with water, and add 1 tablespoon of salt; leave them to soak overnight or for at least 6 hours.

3

Drain and rinse the soaked beans well.

4

Put the beans in an Instant Pot or pressure cooker, adding enough water to cover them, along with the smoked ham hock, cumin, bay leaves, salt, and pepper; cook on high pressure for 35 minutes.

5

After cooking, drain the beans and save the liquid for cooking the rice.

6

Cut the ham hock into small pieces or chunks for later use in the dish.

7

In a calero, sauté the smoked ham, bacon, onions, peppers, and garlic in olive oil until softened.

8

Add seasonings like cumin and oregano, mixing until well incorporated.

9

Add the black beans along with the saved broth to the pot and bring to a boil.

10

Once boiling, add the rice and a little bit of vinegar; bring to a boil again.

11

After boiling, reduce heat to medium-low and cook uncovered until all the liquid has evaporated and you can hear sizzling.

12

Once the liquid has evaporated, reduce heat to low, stir the rice thoroughly, cover, and cook for another 20 minutes.
