Marinated Cucumber Salad

2 cucumbers
1/2 red onion
1/2 cup white vinegar
1/2 cup raw turbinado sugar
2 tablespoons water
1 tablespoon lemon juice
1 tablespoon canola oil
1/4 teaspoon black pepper

Cut 2 cucumbers into ¼ inch slices.

Thinly slice one half of a red onion.

In a small saucepan, add ½ cup of white vinegar, ½ cup raw turbinado sugar, 2 tablespoons of water, 1 tablespoon of lemon juice, 1 tablespoon of canola oil, and ¼ teaspoon of black pepper.

Heat the mixture over high heat and stir until the sugar is completely dissolved.

Let it cool for about 10 minutes.

Pour the mixture over the cucumbers and vegetables.

Cover and put it in the fridge overnight.
