Apple Walnut Acorn Squash

1 lb bacon
2 cups diced apple
1 cup chopped walnuts
2 medium acorn squashes

Preheat the oven to 375°F (190°C).

Cut the acorn squashes in half and scoop out the seeds.

In a mixing bowl, combine the diced apples, chopped walnuts, brown sugar, maple syrup, cinnamon, nutmeg, and salt.

Fill each acorn squash half with the apple-walnut mixture.

Place the filled acorn squashes in a baking dish and add a little water to the bottom of the dish to help steam the squashes.

Dot the tops of the filling with butter.

Cover the baking dish with aluminum foil and bake for 30 minutes.

Remove the foil and bake for an additional 15-20 minutes, or until the squashes are tender and the filling is bubbly.

Let cool for a few minutes before serving.
