Fill a pot with water and add 2-3 tablespoons of salt to it.
Place the pot on the stove to warm up and boil the water.
Peel the potatoes and cut them into thick slices, about half an inch thick.
Once the water is boiling, add the sliced potatoes and cook for 7-8 minutes.
In a pan, heat olive oil and add the fresh mushrooms to sauté until golden brown.
Season the mushrooms with salt, pepper, and dry thyme after they start to brown, then set aside.
In a high-speed blender, combine cashews, 2 tablespoons of nutritional yeast, garlic powder, corn starch, and salt and pepper to taste.
Add 2 cups of cold water to the blender and blend until smooth.
Add some of the potato cooking water to the blender for extra flavor and blend again until well mixed.
Drain the partially cooked potatoes in a colander and rinse them with tap water to reduce saltiness.
In a casserole dish, add a little olive oil to prevent sticking, then layer in the potatoes and cooked mushrooms.
Pour the cheesy sauce over the potatoes and mushrooms, ensuring everything is well covered.
Optionally, sprinkle vegan mozzarella cheese on top of the dish.
Cover the casserole with wet parchment paper and then with aluminum foil to prevent direct contact with the potatoes.
Preheat the oven to 450°F (232°C).
Bake the casserole in the oven for 40 minutes.
After 40 minutes, remove the cover and bake for an additional 15 minutes to achieve a golden color.
Garnish with fresh parsley before serving.
