Baked Chicken Breast with Halloumi & Honey

1/8 cup olive oil
1/4 cup honey
juice of 1/2 lemon
1 clove garlic
sage leaves
thyme leaves
3 millimeter slices of halloumi cheese
rice (for serving)
peas (for serving)

Even out the chicken breasts by trimming the fat end and the skinny end without flattening them.

Prepare the marinade by mixing together a solid pinch of salt, 1 teaspoon of black pepper, 1/8 cup of olive oil, 1/4 cup of honey, the juice of half a lemon, and 1 clove of garlic.

Pour half of the marinade over the chicken and coat it evenly on both sides.

Scatter sage and thyme leaves over the chicken, being careful not to use too much sage.

Slice halloumi cheese into 3 millimeter slices and scatter over the chicken.

Pour the remaining marinade over the chicken and halloumi.

Preheat the Kamado Joe to 200 degrees Celsius (or use an oven at the same temperature).

Cook the chicken in the Kamado for 20 minutes.

Prepare fried rice while the chicken is cooking.

After 20 minutes, remove the chicken from the Kamado and plate it with fried rice and peas, drizzling sauce over the top.
