Prepare the sourdough starter by mixing 100g sourdough starter with 55g water, 117g bread flour, and 2g salt. Let it sit at room temperature for 2 hours, then refrigerate overnight.
For the main dough, combine 225g ice water, 1g malt extract, and 240g of the prepared sourdough starter in a large bowl.
Add 75g whole wheat flour, 150g bread flour, 75g rye flour, 1g instant yeast, and 6g salt to the mixture.
Mix until a dough forms, then add 10g unsalted butter and mix until incorporated.
Knead the dough by pulling and slapping it for 3-5 minutes until smooth.
Perform a gluten development test by cutting a small piece of dough and stretching it to check the strength of the gluten.
Ensure the dough temperature is between 23°C and 25°C.
Let the dough undergo primary fermentation for 40 minutes at 26°C.
After 40 minutes, flip the dough and place it back in the container to continue fermenting for another 90 minutes under the same conditions.
Once primary fermentation is complete, divide the dough into two pieces and lightly shape them into rounds for pre-shaping.
Let the dough rest for 30 minutes to relax the gluten.
After resting, shape the dough into its final form and place it seam-side down on a proofing cloth.
Allow the dough to undergo final fermentation for 20-30 minutes while preheating the oven to 250°C.
Once the oven is preheated, place the dough in the oven seam-side up and spray water inside the oven.
Bake at 230°C for 20 minutes, then reduce the temperature to 210°C and bake for an additional 15-20 minutes.
Remove the bread from the oven and let it cool before slicing.
