Homemade Pumpkin Spice Bagels

The addition of pumpkin spice reflects the seasonal flavors of fall, making these bagels a festive treat. Today, variations abound, with pumpkin spice bagels enjoyed across the country, especially during autumn.

Add warm water to the mixer.
Add yeast, salt, brown sugar, and pumpkin puree to the mixer.
Add ground cinnamon, nutmeg, cloves, and allspice (or pumpkin pie spice).
Add flour, reserving the last half cup until checking the dough.
Start the mixer and mix until fully combined.
Poke the dough to check its stickiness; it should be dense and not very sticky.
If the dough is sticky, add the reserved flour gradually until it reaches the right consistency.
Let the mixer knead the dough for about 9 minutes (12 minutes if using a KitchenAid).
Remove the dough from the mixer and shape it into a ball on the counter.
Place the dough ball in a large bowl and cover tightly with plastic wrap.
Set the bowl in a warm place to rise for 45 minutes to an hour.
After rising, divide the dough into eight equal pieces (140-150g each).
Shape the bagels using the snake method: squeeze out bubbles, roll into a log, and join the ends together.
Alternatively, use the ball method: roll into a tight ball and poke a hole in the center, enlarging it gently.
Rest the shaped bagels on a floured countertop while boiling water heats up.
Boil the bagels in batches for about 30 seconds on each side.
Transfer the boiled bagels to a parchment-lined sheet pan.
Bake in a 400°F oven until golden brown, ensuring they are cooked through to avoid a gummy center.
