Dice the white onion nice and small.

Reserve half of the diced onion for raw taco topping.

Heat a pan over medium heat.

Cook until browned and fully cooked through (about 5 minutes).

Squeeze in the juice of 2 lime wedges and stir to combine.

In a bowl, add diced tomatoes, drizzle with olive oil, add salt, and squeeze fresh lime juice, then mix gently and set aside.

Warm the tortillas directly over a gas flame for a few seconds per side until lightly charred and heated through.

Layer your tortilla with lime-seasoned ground beef, fresh raw diced onion, fresh cilantro, tomato salad, avocado, Greek yogurt, and cheddar cheese (optional).
