Gather hamburger buns and hot dog buns for the stuffing.
Chop 4-5 stalks of celery into small pieces.
Heat a little more than 1 tablespoon of extra virgin cold pressed olive oil in a hot pan.
Add the chopped celery to the pan and sauté until softened, about 8-10 minutes.
Add 1 cup of whole roasted and peeled chestnuts to the pan and sauté for a few minutes.
Add dried cranberries to the pan and cook for 2 minutes.
Stir in dried sage and dried parsley, along with salt and black pepper, and mix well for 2 minutes until fragrant.
Pour in 2 cups of chicken stock and mix everything together.
Add the bread (hamburger and hot dog buns) into the mixture and mix until combined.
Cover the pan and transfer to a preheated oven at 400°F (204°C) for 30 minutes.
After 30 minutes, remove the cover and bake for an additional 10 minutes until the top is brown and crunchy.
