Peel 3 to 4 large Spanish onions and cut them into thick slices about a third of an inch thick.

Separate the onion slices into rings.

Coat the onion rings with buttermilk and let them soak.

Mix together flour, baking powder, salt, and cayenne pepper in a bowl.

Add vegetable oil, a splash of lemon juice, 1 egg, and a bit of water to the batter mixture.

Shake the excess buttermilk off each onion ring and dip it into the batter.

Carefully place the battered onion rings into hot oil that is hot but not smoking.

Fry the onion rings until golden on both sides, then take them out and let them drain on paper towels.
