Peel a whole head of garlic and lightly smash the cloves, removing the outer paper layer and trimming off the root end.
Remove the stems from 3 habaneros and slice them into thin slices, about 1/4 inch thick. Wear rubber gloves when handling the peppers.
In a pint-sized mason jar, add the cinnamon stick, smashed garlic cloves, and sliced habaneros.
Pour raw honey into the mason jar until it reaches just below the thread, leaving some headspace.
Loosen the cap of the jar daily for the first week and swirl the ingredients around to ensure they are coated in honey. Store the jar in a pantry away from direct sunlight at a temperature of 68-75°F.
Prepare a seasoning blend by mixing 3 tablespoons fine sea salt, 1 tablespoon garlic powder, 1 tablespoon onion powder, 1 tablespoon chili powder, 1 tablespoon paprika, 1 teaspoon ground coriander, 1 teaspoon cumin, and black pepper to taste in a mixing bowl.
Add 4 chicken thighs to the mixing bowl with about 1 tablespoon of oil and coat the chicken evenly with the seasoning blend.
Place the seasoned chicken thighs skin side up in a heavy-duty cast iron casserole dish without overlapping them. Cover the dish with aluminum foil.
Preheat the oven to 425°F and bake the chicken for 20 minutes.
Remove the foil and prepare the glaze by zesting an entire lime and squeezing the juice into a bowl over a fine mesh strainer.
Chop about 4-5 cloves of garlic and 5 slices of habanero roughly, then add them to the bowl with the lime juice and zest.
Pour about 1 cup of honey into the bowl and mix all the glaze ingredients thoroughly, adjusting with salt and pepper to taste.
Check the internal temperature of the chicken, aiming for 135°F, and baste the chicken with the lime honey glaze before returning it to the oven for another 15 minutes until it reaches 165°F.
Let the chicken rest for about 10 minutes before cutting into it.
