Preheat the oven to 350°F.
Sauté 1 pound of sliced mushrooms to cook out moisture.
Add 4 stalks of diced celery to the mushrooms and continue sautéing.
Once mushrooms and celery are cooked, add 1 large diced onion and 4 cloves of minced garlic.
Cook until onions are well cooked, adding water or vegetable broth if sticking occurs.
Prepare 2 loaves of buckwheat bread by cubing them after cooling.
Spread cubed bread on a baking pan and dry out in the oven at 250°F for 1 hour.
Combine the mushroom mixture with the dried bread cubes.
Add 3/4 cup of cranberries, 3 tablespoons of fresh herbs, and 1 liter of vegetable broth, mixing gently to moisten the bread.
Transfer mixture to a 9x13 casserole dish and cover with a lid or parchment paper.
Bake for 40 minutes, checking for moisture and adjusting time if necessary.
