Slowly pour in 2 cups of milk while whisking constantly to avoid lumps.
Cook the mixture for 3-5 minutes to develop flavor and eliminate the raw flour taste.
Add 1 pound of spinach to the pot and season with salt and black pepper.
Cover the pot and let the spinach wilt for about 1 minute, then stir to combine.
Remove the lid, increase heat to medium, and continue cooking until the spinach releases moisture and the sauce thins out.
Once the spinach is mostly wilted, reduce heat and add 1 cup of grated Gruyere cheese, stirring until melted and combined.
