800g Cod fillet

1 Clove of garlic
20ml water
8 Sprigs of saffron

De-bone the cod fillets, if necessary.

Cut the fillets into pieces weighing approximately 200g each.

Place the cod pieces in a saucepan and cover them with Bertolli EVOO.

Cook the cod on low heat for approximately 6 minutes.

Use a metal skewer to check if the cod is cooked through; it should run through with no resistance.

Remove the fillets from the oil and set aside.

Heat 20ml of water and add the saffron to color the water.

Combine the gelatin from the cod cooking process with a bit of the oil and beat together.

Add the saffron water and salt to taste.
