British Roasted Potatoes

Cayenne adds heat and flavor.
Peel and cut potatoes into large bite-sized pieces.
Add potatoes to a pot and cover with cold water. Salt the water and bring to a boil.
Boil for about 10 min or until fork tender.
While potatoes are boiling, preheat the oven to 400°F.
For the last few minutes of preheating, place your roasting pan in the oven with the butter to heat the pan and melt the butter.
Drain potatoes and toss them around in the pot to create a “fluffy” texture on the outside.
Add your seasonings, except the fresh garlic, to the pot and toss to coat.
Add the olive oil to your hot roasting pan and carefully add in the potatoes so you don’t splash the oil.
Roast them in the oven for 1 hour, tossing every 20 min.
At the last toss at 40 min, add in the minced garlic.
