2 Tbsp butter
3 Tbsp olive oil
1 tsp salt
1 tsp fresh rosemary, chopped
1/2 tsp black pepper
2 cloves minced garlic

Peel and cut potatoes into large bite-sized pieces.

Add potatoes to a pot and cover with cold water. Salt the water and bring to a boil.

Boil for about 10 min or until fork tender.

Add the olive oil to your hot roasting pan and carefully add in the potatoes so you don’t splash the oil.

Roast them in the oven for 1 hour, tossing every 20 min.

At the last toss at 40 min, add in the minced garlic.
