Heat a stock pot over medium heat and add 2 tbsp of extra virgin olive oil.

Finely chop 1 medium-sized onion, roughly chop 6 cloves of garlic, thinly slice 2 celery sticks, and cut 1 large carrot into small pieces.

Add the chopped ingredients to the stock pot and sauté for about 5 minutes until the vegetables are softened and onions are translucent.

Add 0.5 tsp of sweet smoked Spanish paprika, 0.5 tsp of ground cumin, and a pinch of 0.25 tsp of saffron threads; mix well.
