Wash and peel 2 medium sweet potatoes, or use 1 large sweet potato.
Cut the sweet potatoes into 1-inch pieces, ensuring even sizes for even cooking.
Drizzle a little olive oil over the sweet potatoes to help them roast and for seasoning to stick.
Add a taco seasoning blend to the sweet potatoes, adjusting to your flavor preference.
Spread the sweet potatoes evenly onto a cookie sheet.
Roast the sweet potatoes in the oven at 425°F (220°C) for 15 minutes.
Prep mini sweet peppers by deseeding and cutting them into 1-inch pieces.
Chop a red onion into pieces (optional) to add flavor to the dish.
Rinse a bag of broccoli florets and add them to the rest of the vegetables.
Drizzle olive oil over the mixed vegetables and season with the taco spice blend, then mix well.
After 15 minutes, take the sweet potatoes out of the oven, turn some over if possible, and scoop them to the side of the baking sheet.
Add the rest of the vegetables (peppers, onion, broccoli) to the cookie sheet on the opposite side of the sweet potatoes, spreading them out evenly.
Return the cookie sheet to the oven and bake for another 15 minutes until all vegetables are roasted.
