Spicy Air Fryer French Fries

Cut the yellow potatoes into thin strips.
Soak one batch of potato strips overnight to reduce potassium for kidney health.
In a large bowl, toss the non-soaked potato strips with about a teaspoon of olive oil and spices (smoked paprika, garlic powder, ancho chili powder, onion powder, kosher salt).
Place the non-soaked fries in the air fryer basket on the left side.
Toss the soaked potato strips with the same olive oil and spices, then place them in the air fryer basket on the right side.
Cook both batches in the air fryer for about 15 to 20 minutes, flipping halfway through.
Check the fries for doneness; they should be golden brown and crispy.
Optionally, garnish with chopped parsley and Parmesan cheese before serving.
