Soak black beans overnight and cook them in chicken broth for about 40 minutes.

Preserve the cooking liquid from the beans.

In a large pot, heat 1/4 cup of olive oil and fry the cooking ham until browned.

Add the cooked black beans and 3 cups of long grain rice to the pot.

Pour in the preserved liquid from the beans and enough water to cover the rice by about 1/2 inch.

Add about 1 tablespoon of salt to the mixture and stir well.

Allow the rice to absorb most of the liquid over medium heat.

Once most of the liquid is absorbed, stir the rice, lower the temperature to low or simmer, cover, and let it cook for about 40 minutes.
