Soak the corn on the cob in water for 30 minutes to an hour to prevent it from catching fire.
Preheat the grill to about 400 degrees Fahrenheit.
Place the soaked corn on the hot side of the grill and cover with the lid.
Cook the corn for about 15 minutes, then flip it and cook the other side for another 15 minutes.
Remove the corn from the grill and peel back most of the husk.
Return the corn to the grill for another 5 to 10 minutes to get a charcoal flavor.
Take the corn inside to avoid flies and husk the corn, leaving some silk for presentation.
Mix mayonnaise, lime juice, salt, and cotija cheese in a bowl.
Use a brush to spread the mayonnaise mixture over all sides of the corn.
Sprinkle extra cotija cheese on top of the corn.
Sprinkle tajin or chili powder over the corn for seasoning.
