Cut the liver into strips and remove any membranes or veins.
Finely chop the liver with a knife or use a food processor to finely chop it.
Soak the bread rolls in beef broth and squeeze out excess liquid.
Add the soaked bread rolls to a bowl along with the chopped liver.
Add the egg, sautéed onions, finely chopped garlic, salt, and pepper to the mixture.
Mix everything together by hand until well combined.
Let the mixture rest for a bit to firm up.
Add some fresh parsley and mix again by hand.
Wet your hands and form small dumplings from the mixture, making them smooth and round.
Drop the dumplings into boiling water and let them cook gently for 5 minutes.
Remove the cooked dumplings and place them in a hot bowl.
Pour hot beef broth over the dumplings and garnish with fresh chives.
