Mandi Rice

4 cups sela basmati rice (soaked for 1-2 hours)
oil as required
4 chopped onions
3 dried black lemons
8 green cardamom
2 black cardamom
4-5 bay leaves
7-8 cinnamon sticks
1 tsp cloves
1 tbsp black pepper corns
1 tsp red chili flakes
4 chicken stock cubes
1 tbsp salt (or as per taste)
2 green chilies
1/4 tsp saffron strands (or pinch)
1/2 tsp turmeric powder
2-3 charcoal
fried onions (as you like)
toasted raisins (as you like)
carrots (as you like)

Soak the sela basmati rice for 1-2 hours.

In a pot, heat oil and sauté the chopped onions until golden brown.

Add the dried black lemons, green cardamom, black cardamom, bay leaves, cinnamon sticks, cloves, black pepper corns, red chili flakes, chicken stock cubes, salt, green chilies, saffron strands, and turmeric powder to the pot.

Add the soaked rice and enough water to cook the rice.

Cook until the rice is done and has absorbed the flavors.

For a smoky flavor, place hot charcoal on top of the rice and cover it to infuse the smoke.

Serve with your choice of sides.
