Add 1/4 teaspoon of instant yeast, 1 teaspoon of salt, and 1 teaspoon of cinnamon to the flour and mix.
In a separate container, warm 320 grams of skim milk in the microwave for 30 seconds.
Add 1.5 tablespoons of honey to the warm milk and mix.
Soak 2/3 cup of raisins in water for about 5 minutes before adding them to the mixture.
Combine the milk mixture and the dry ingredients, then add the soaked raisins and walnuts.
Mix everything together until well combined, about 15-20 seconds.
Cover the bowl with plastic wrap and a kitchen towel, and let it sit for 12-14 hours at room temperature.
After 12-14 hours, check the dough; it should be puffed up and risen.
Use a spatula to gently remove the dough from the bowl, being careful not to tear it.
On a floured surface, perform a four-fold technique to shape the dough.
Shape the dough into a tight ball by pulling it towards you on a dry surface.
Place the dough ball on a cutting board dusted with oatmeal to prevent sticking.
Cover the dough with flour and let it rest for 1-2 hours.
Preheat the oven to 475°F (246°C) and prepare a Dutch oven for baking.
