Preheat the oven to 425°F (220°C).
Dice 1/2 pound of bacon and add it to a preheated skillet on the stove.
Cook the bacon until crispy, then set aside.
Dice 1/2 onion and set aside.
In a preheated pot, melt 1/2 stick of butter, then add the chopped onion and cook until soft and translucent.
Mince 1 garlic clove and add it to the onions once they are translucent.
Add 1 tablespoon of flour to the mixture and cook for 1-2 minutes.
Pour in 1/2 bottle of dark beer and let the mixture thicken.
Add 2 teaspoons of dijon mustard to the beer mixture and reduce the heat to medium-low.
Check on the bacon to ensure it is crispy and set aside.
Add 8 ounces of shredded medium cheddar cheese to the beer mixture, saving some for later.
Break apart 4 ounces of cream cheese and add it to the mixture, seasoning with salt and pepper.
Let the cheese mixture melt until smooth, then add 1/4 cup of heavy cream for richness.
Weigh out 2 pounds of crinkle cut french fries and drizzle with cooking oil and Lowry's seasoning salt.
Spread the fries on a hot baking sheet and bake in the oven for 35-40 minutes until golden brown and crispy.
After about 20 minutes, check the fries and continue baking for another 15-20 minutes.
Once fries are done, layer the beer cheese sauce on top, followed by the crispy bacon, extra cheese, chives, and a dollop of sour cream.
Finish with a drizzle of Cholula hot sauce for flavor.
